- 2 seedless cucumbers, chopped
- 3 Tbs lemon, juiced
- 1 Small shallot
- 1 clove garlic, chopped
- 1/3 cup fresh dill
- 1/4 cup fresh parsley
- 2 Tbs olive oil
- 1/4 cup radish, chopped finely
- 1 1/2 cup plain Greek yogurt (plant-based yogurt can be used here if vegan)
Instructions
- In a blender, combine the chopped cucumber with the yogurt, lemon juice, shallot, garlic, dill, parsley, and olive oil.
- Blend until smooth.
- Season with salt and pepper to taste.
- Refrigerate until cool.
- Serve with chopped radish and a sprinkle of dill.
