• 2 seedless cucumbers, chopped
  • 3 Tbs lemon, juiced
  • 1 Small shallot
  • 1 clove garlic, chopped
  • 1/3 cup fresh dill
  • 1/4 cup fresh parsley
  • 2 Tbs olive oil
  • 1/4 cup radish, chopped finely
  • 1 1/2 cup plain Greek yogurt (plant-based yogurt can be used here if vegan)

Instructions

  1. In a blender, combine the chopped cucumber with the yogurt, lemon juice, shallot, garlic, dill, parsley, and olive oil.
  2. Blend until smooth.
  3. Season with salt and pepper to taste.
  4. Refrigerate until cool.
  5. Serve with chopped radish and a sprinkle of dill.
  6. Enjoy!
