Ingredients

1/2 cup almond butter (or any nut butter you choose)
2/3 cup oatmeal (You can use quick cook but not instant)
1/3 cup mini chocolate chips
2 tbsp chia seeds
3 tbsp maple syrup or honey

Instructions

  1. In a medium size mixing bowl, combine all ingredients
  2. Stir together until well blended
  3. Roll into small bite size balls (you should make between 8-10)
  4. Place on a tray or plate and place in refrigerator to chill
  5. Once chilled remove from tray and place in air tight container.

*If mixture is too moist to roll place in fridge for 20 minutes to slightly harden the nut butter.

Energy bites are a tasty alternative to the store bought granola bar. Kids love them, adults love them. You can use any type of nut butter you prefer. I have used peanut butter, sunflower butter and almond butter. I have even used Nutella, but that is more like a dessert than a snack. See that recipe here.

You can add flax seed, pumpkin seeds, hemp seeds, dried fruit like raisins and cranberries. The mixture is completely up to you. Enjoy! ~Amy
