- 1/2 cup medjool dates, pitted and chopped
- 2 Tbs peanut butter, creamy
- 1/2 tsp vanilla extract
- 1 cup pecans, raw
- 1/2 tsp cinnamon, ground
- 1/4 cup oats, quick cook
- 2 Tbs chia seeds
- 1/8 tsp salt (pinch)
Instructions
- Pulse dates, peanut butter, and vanilla in food processor until paste forms. Remove from processor.
- In a separate bowl, combine pecans, oats, chia seeds, and cinnamon. Add to food processor and pulse until fine crumbs form.
- Add date paste and pulse until dough forms. You can add a bit of warm water if dough is crumbly. Texture will depend on freshness of dates.
- Using a small ice cream scoop or a tablespoon, scoop dough into palms and squeeze to form balls [do not roll, as they may fall apart]. Repeat until approximately 12 bites are formed.
- Dust with additional cinnamon if desired and refrigerate for 30 minutes or more.
