Chocolate Chip Almond Butter Muffins for the win! These muffins are so good and so good for you. They are super easy to make. You can dump all the ingredients in a blender and then pour into lined muffin cups. I don’t have a blender so I only blend the wet ingredients in my Nutra Bullet and stir in the rest of the ingredients.

So what’s the surprise ingredient?

I know you have already gone down to the recipe to look but I will tell you now anyway. It’s cauliflower. Yes, crazy I know but it’s so good for you and you don’t even taste it. It is actually tasteless in this healthy and delicious recipe.

Cauliflower is so good for you!

It is packed with nutrients like Vitamin C, Vitamin K, and the B-vitamins, B6, Folate, and Pantothenic Acid. It is also loaded with potassium, magnesium, manganese and phosphorous.

Cauliflower is full of antioxidants and the vitamin C acts like an antioxidant too so it is reduces inflammation and boosts your immunity. Who doesn’t want that these days?

It’s also loaded with fiber that helps with your digestion by keeping you regular, it helps with lowering your risk of heart disease, cancer and diabetes. But, the thing to remember about fiber is that it keeps you fuller longer so you will eat less.

Cauliflower helps you eat less!

It’s a good low calorie food – only 25 calories per cup – to add to your diet. It can replace rice and it can replace flour, like I’m doing with this recipe. If you have have a gluten sensitivity, cauliflower is a perfect addition. It’s also water-dense so in addition to the fiber, it helps with weight loss. Low in calories, high in fiber, high in water = good for weight loss.

Okay, enough about how good cauliflower is for you. Let’s get to the recipe!

Chocolate Chip Almond Butter Muffins

Ingredients

3 medium bananas
1 cup riced cauliflower (thawed from frozen)
3 eggs
1 1/2 cup almond flour
1/2 cup almond butter
2 tbsp maple syrup
1 1/2 tsp baking powder
1/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/3 cup mini chocolate chips (2 tbsp extra to sprinkle on top)
2 tbsp slivered almonds to sprinkle on top

Instructions

  1. Preheat oven to 350*F.
  2. Defrost cauliflower rice.
  3. Prepare muffin tin with paper liners.
  4. Combine all wet ingredients in the blender. Blend until smooth.
  5. Add blender mixture to mixing bowl. Add remaining dry ingredients except the chocolate chips and slivered almonds.
  6. Stir together. Do not over mix.
  7. Fold in mini chocolate chips.
  8. Scoop 1/4 cup of batter into prepared muffin cups.
  9. Sprinkle with mini chocolate chips and slivered almonds.
  10. Bake in preheated 350*F oven for 15-20 minutes.
