I just love a good snack bite and I think I have found my next favorite. Sweetened with dates and just so yummy! You will feel good about eating these as a snack because they are full of good for you foods,

Snack bites are so easy to make and this one is no exception. I hope you give it a try because they are simply delicious. If you do give these snack bites a try and let me know what you think.

Ingredients:

• 1 cup cashews
• 1 cup dates
• 1/2 cup unsweetened coconut flakes
• 1 tablespoon freshly squeezed lemon juice
• 1 tablespoon lemon zest

Instructions:

  1. Combine all ingredients in a food processor, pulse until finely ground.
  2. Form into one inch balls. Keep them in the refrigerator in an airtight container for about a week.
