A unique take on a German Chocolate Cake is my NEW Vegan Mocha Madness Cake. I think this cake is absolutely delicious and I hope you think so too. The cake is moist and tasty. The topping makes this cake so doubly good. Coconut goodness that soaks into the top of the cake. Broiled to crisp mocha perfection. This cake is highly caffeinated so if you want to eat cake any time after noon, I highly recommend using decaf. (t-hehehe)

Vegan Mocha Cake

Ingredients

Sift together
1 cup sugar
1/2 tsp salt
1 tsp baking soda
1 1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder
3 tbsp finely ground Purity Coffee
Add & whisk together
1 tsp apple cider vinegar
1/3 cup vegetable or corn oil (canola oil makes for a crumbly cake)
1 tsp vanilla
1 cup + 2 tbsp cold extra strong Purity Coffee (I made cold brew and it is important for this to be cold because it changes the texture of the cake once cooked)

Instructions

  1. Pour batter into greased 8×8 baking dish
  2. Bake for 35 minutes in a pre-heated 350* oven

Vegan Coconut Pecan Topping

Ingredients

4 tbsp coconut oil – melted
1/3 cup cold extra strong Purity Coffee
1/2 cup brown sugar
1/2 cup shredded coconut
1/2 cup pecans – chopped
2 tsp finely ground Purity Coffee

Instructions

  1. Add coffee to melted coconut oil and stir together
  2. Mix in brown sugar
  3. Stir in coconut, pecans and ground coffee
  4. Spread evenly over cooled cake
  5. Broil on high for 2-4 minutes – until crisp and golden brown (be careful with this step because it can easily burn if you are not watching)
