Ingredients:
2 cups fresh green beans
1 cup fresh mozzarella cheese balls, dicing into pieces
1 cup cherry or grape tomatoes, slicing into halves
1 tablespoon extra-virgin olive oil
Salt and pepper to taste
Dressing:
2 tablespoon balsamic vinegar
2 tablespoon extra-virgin olive oil
1 tablespoon pure maple syrup
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions:
- Heat the oven to 400 degrees, line a baking sheet pan with parchment paper.
- Wash and trim the ends of green beans, place them onto the baking sheet pan in an even layer.
- Drizzle with olive oil, sprinkle with salt and pepper.
- Bake for 10-15 minutes or until beans are soft but crisp. Let cool or refrigerate to make cold.
- While beans are roasting prepare cheese and tomotoes by slicing in half or dicing.
- For dressing, combine all dressing ingredients together and whisk.
- On a large rimmed platter or in a big bowl, place the roasted beans, cherry tomatoes and mozzarella cheese, pour the dressing, toss to mix well.
