It’s Tuesday and today is my day to teach at my local library.  We make a snack each week and sometimes it’s a hit and sometimes, like last week, I don’t think they will be making it at all. (Hence, that the recipe is not posted here.)

Today’s snack was Nutella Energy Balls. 

They loved them!  When I say loved them, I mean really loved them.  No one was talking! Everyone was enjoying and being mindful with every bite of the sweet treat! And, when they were done snacking they kept saying WOW, that was so good!

They are really tasty and served with half a banana make for a 200 calorie snack or a quick, delicious breakfast! Make up a batch and keep them in your refrigerator for up to a week. If you have them in the fridge, there is no reason to be skipping breakfast – that’s for sure!

Here’s the recipe:

Ingredients

1 cup of rolled oats (the old fashioned kind)
2 tbsp ground flax seed
2 tbsp chia seeds
1/4 cup unsweetened/unflavored protein powder (I use Bob’s Red Mill Whey Protein)
1/2 cup Nutella
2 tbsp water

Instructions:

  1. Combine all ingredients and mix until well blended. If you find the mixture a bit dry, add a bit more water to add moisture.
  2. Form into 10 balls. Refrigerate before serving.
